Big flavors have always been the cornerstone of our prized Texas Whiskies, and Texas Pot Still Bourbon is no exception. Made grain-to-glass using a traditional pot still distillation ensures a rich and viscous spirit that stands up to aging in new charred oak without losing its essence. Each dram is full of character and body, with an aromatic entry and soft finish, for an approachable yet memorable experience

What Makes our Bourbon Different

Texas Grown Grains

We use the highest quality grains, including local Texas-grown grains in every batch. We then mill, mash, ferment, and distill entirely onsite in Waco, Texas.

Traditional Copper Pot Stills

Our custom Forsyth copper pot stills are, as far as we know, the tallest pot stills in the world. Their height and unique helical lyne arm design allows us to create a rich and viscous bourbon that is balanced by fruity and bright elements.

Extended Fermentation

We have specifically tailored our long fermentations for each of our recipes - coaxing our yeasts alongside our local microflora to create the sour precursors to rich fruity aromas that will develop in the spirit.

Texas Climate

The climate in the Lone Star State is unique to say the least. The wild daily temperature swings we experience throughout the year at our distillery and barrel warehouses create layers of unique flavor.

Maturation

We pair the intense Texas climate with highly customized 225 Liter casks that help facilitate maturation in such a dynamic environment. Each of our whiskies are intentionally matured across a variety of custom toast & char profiles so that a nuanced and complex profile can be achieved.

Blending

During the blending process our team noses & tastes every barrel to better understand what the years maturing in the Texas climate have helped us create. The art of shepherding casks through time often means that the story we expected to tell has changed, and our task becomes creating a cohesive story out of the words Texas has written for us.

INGREDIENTS

1 1/2 oz. Balcones Texas Pot Stilled Bourbon
3/4 oz. Fresh lime juice
3/4 oz. Ginger beer (we use Reeds Extra)
1/2 oz. Falernum (we use BG Reynolds)
2 Dashes of Angostura bitters
Garnish: Lime wheel saturated with sugar and agno bitters (torched)

RECIPE

Shake with ice and pour contents into a rocks glass (a dirty pour). Garnish and serve.

What is pot still bourbon?

Though others may use different processes, we use a traditional copper pot still to make our bourbon. The more common method of bourbon distillation is on a “column still,” which creates a lighter spirit, whereas a pot still ensures a rich and viscous spirit that stands up to aging in new charred oak in the Texas climate without losing its essence.

What's the difference between bourbon and whisky?

Whisky is a distilled spirit made from fermented grain such as rye, wheat, corn or barley. Bourbon is a type of whisky, made only in America, that has a specific set of criteria:

  • Made from a minimum of 51% corn
  • Distilled no higher than 160 proof
  • Aged in new, charred oak barrels no more than 125 proof
  • Must be a minimum of 80 proof at bottling

Is Texas Pot Still Bourbon smooth enough for sipping?
